In another month or so, the summer will soon be coming to an end as usher in the cool fall months soon followed by the cold, frigid winter. But before you turn in your swim shorts, tank tops and sweet iced tea for jackets, scarves and hot cocoa, here are ten great summer recipes to squeeze in before we make the switch!

Berry Spinach Salad

Use some fresh summer berries — such as strawberries, blueberries or raspberries — and drop them on top of a bed of baby spinach leaves and, VOILA! You have a nice summer spinach salad, no muss, no fuss. Take it to the next level by topping it with feta cheese and maybe adding a nice homemade strawberry poppy seed dressing.

Fresh Blueberry Crumble

If you have some blueberries left over from that salad, why not make a delicious baked crumble before summer ends?! Just toss those berries with sugar, flour and spices, add to a baking dish, top off with more flour, melted butter and brown sugar, and bake! Take it to the next level with a scoop of vanilla ice cream. YUM!

Grilled BBQ Chicken

We asked what was better than fresh strawberries in the beginning, but we honestly have to question if ANYTHING is better than BBQ chicken slow-cooking on a grill. It’s very simple — Just grab your favorite chicken pieces (preferably thighs and drumsticks, since they tend to hold up better than breasts), season them, slather them with your favorite BBQ sauce and put them on the grill! Watermelon is the summer’s largest fruit, and get this — you can grill it! Grilled Vegetable Skewers

So, we’ve told you to put meat and fruit on the grill, so the summer wouldn’t be complete without grilled vegetables! Use skewers to thread on some sliced tomatoes, sliced zucchini, small sections of corn on the cob, chunky red onion and peppers, mushrooms, and maybe even some Brussels sprouts — use whatever veggies you like! Mix up a nice, spicy seasoning for basting then pop them on the grill!

Peach Cobbler

Even though peach season is any time of year, they hold up next to berries and watermelon as a summer favorite. The best thing is, making peach cobbler is so simple. Just skin and slice some ripe peaches, add them to a sauce pan and cook with sugar until syrupy, add to a baking dish, cover with a batter made with flour, sugar and spices and bake! Peach cobbler isn’t complete without a serving of vanilla ice cream, so make sure that’s added to your ingredient list!

No one can deny the way their mouth waters when they pull apart a warm grilled cheese sandwich and watch the strings of melted cheese fall onto their plate. It’s literally like heaven.
